Coriander
Coriander is a hreb that is used extensively in Indian cooking. Dired coriander seeds are ground to form a powser which is used as a base for most curries. Fresh coriander is also used in cooking and as a garnish.

Usually used in stick form at the beginning of the cooking process.

Chilli
You should know what chillies are by now. Green finger chillies and red Kashmiri chillies are popular in curry cooking although Kashmiri chillies are hard to find. Ground chilli powder is a fundamental component of many curries and comes in different strengths from mild to very hot.
