Red Chicken Style Curry

This great curry taken from a recipe for a Red Chicken Curry from Bangladesh. I have used Tofurky vegan chicken which quite frankly is awesome and works really well in this recipe. You could use any Chicken style product of course, Quorn fillets would also work well. It contains a lot of chilli and is nice and hot, if your chilli powder is not very red you can always use a drop of red food colouring.

Puree the ginger, garlic, tomatoes and cumin seeds.

Heat the oil on medium heat and fry the onions until golden brown.

Add the chilli powder and fry for a few seconds.

Add some stock and bring to the boil.

Add the coriander, turmeric and garam masala then fry for a further minute.

Add the Tofurky and fry in the spices for a few minutes.

Add the tomato mixture and the remaining stock. Bring to the boil and simmer for 10 minutes.

Finally add the vinegar and simmer for 1 minute.

2 tbsp olive or vegatable oil
2 onions chopped
2 tsp dried red chilli
1 1/2 tsp ground coriander
1/4 tsp ground turmeric
1/2 tsp garam masala
1/2 tsp cider vinegar
