Madras

This curry gets its name from the city of Madras which is now known as Chennai. It is not really a style of curry as there are many styles of curry common to the region. The recipe given on this site is one style of a Madras curry. In restaurants it is a term that dictates the strength of a curry which is usually fairly hot. For example, you can often ask for any curry Madras strength.

Mustard seeds

The seeds of mustard plants. Usually sauted until they pop at the beginning of cooking a curry. Indian cooking uses brown or black mustard seeds.
